What you will need: 1 pkt Whisk & Pin pancake mix, 2 small eggs, 1½ cups of milk, knob of butter.
Method: Pour contents into a large mixing bowl. Make a well in the centre, add 2 small eggs and 1½ cups of milk. Whisk vigorously for 20 seconds, then rest the mixture for a few minutes.
Heat a thick-bottomed non-stick pan and add a knob of butter. Spoon a ¼ cup of mix per pancake and cook till brown on both sides.
Makes approximately 15 x 10cm pancakes.
